Hot days in our recent heatwave has had me reaching for anything cold to cool down whilst keeping my food as clean as possible. Buying fresh and organic where I can is important, as well as eating for good nutrition and to support my lifestyle. With that in mind here is an absolute winner for you; simple, fresh and zingy. If you're in the UK, watermelon is not going to be around for long as summer is nearly over so buy local, buy fresh and dig in. The kids will love it too as it is a fabulous mix of naturally sweet and salty.
This recipe so simple, you can literally throw it together on your favourite serving plate and it will taste amazing.
Ingredients
You’ll want…
A watermelon
Ripe tomatoes
Avocado
Feta or any crumbly sharp tasting British cheese
Fresh Mint leaves
Black Olives
Fresh Lime
Drizzle of Olive oil
Sea salt and pepper
Make in the proportions that suit you. For two, and as a main course, I used half a watermelon, one pack of Feta cheese, one avocado, six ‘on the vine’ tomatoes, a handful of crushed mint leaves ( just rinse them and squeeze between your fingers to release the mint oil.) The juice of a lime with some grated lime zest for added zing, throw on your olives, a drizzle of olive oil and season to taste.
