Spring Smoothie
Spring has arrived here in London! With the cherry blossoms in full bloom and the sun peaking through in the morning I thought I’d create a smoothie that represents a spring morning. So it here it: fresh, light and full of the possibilities of a new season. Just for you, enjoy!
1 Apple (cut into 4 )
1 Avocado
Handful of Spinach
330ml of Coconut water
Juice of half a Lime
Put the coconut water and spinach into a processor first and whizz until mixed well. Then add the chopped apple, avocado flesh and lime juice. Whizz until you have a lovely bright green, runny smoothie. This is deliberately runny so you can just drink and go, or have as an accompaniment to a meal.
