Strawberry Sunshine smoothie

I love London in the summer, seeing everyone out in our beautiful parks, or down by the river chilling out in the sunshine makes me think of the classic British pudding, strawberries and cream. So here's my healthy take on it, made up as a smoothie that you can have any time of day. It's so delicious you won't want to share it, but make sure you do and spread a little love and goodness around! 

The healthy bit

Sunshine is so important for us; it stimulates the production of Vitamin D, which helps the body control calcium and contributes to the maintenance of healthy bones ands teeth. Mostly found in oily fish, eggs and fortified cereal, some people may be missing out, and deficiencies are becoming more common. 

So here’s a delicious way to get your inner boost of sunshine, by rustling up a simple smoothie packed with Vitamin D.  I’ve also added nut butter for protein, and coconut water for hydration. This recipe makes enough for one large glass, or two small ones. It's great for kids, adults, anyone in fact, and especially nice when you've had a good pilates workout! 

Ingredients

6 Strawberries

Handful of blueberries

1 small banana

1 dessertspoon of Cashew Nut Butter

200 ml of Coconut Water

2 dessertspoons of Linwoods Milled flaxseed with bio cultures and vitamin D

It's delightfully simple to make. Just put it all in your blender and whizz away until fully mixed, you can add more coconut water if you like a thinner consistency. Then pour into serving glasses, decorate with a couple of strawberries, serve and enjoy!
